If I had to think of the most versatile fruit in the kitchen, I would very probably choose the apple, a key ingredient for the preparation of original first courses and sweet snacks for any time of the day.
Fragrant, crunchy and aromatic: Ambrosia™ is the perfect variety for my autumn recipes. Harvested in Val Venosta and Cuneo between the end of September and the beginning of October, this apple comes from two very special production areas in Italy with a unique microclimate as a guarantee for its bright red color and its sweet and juicy taste with notes of honey and nectar.
My Risotto with Ambrosia™ apple, gorgonzola and walnuts is based on unusual and exciting combinations. This easy and special starter enhances the sweetness of the apple in contrast to the stronger and slightly bitter aftertaste of walnuts and gorgonzola. It is fast to prepare with natural ingredients. I added fragrant spices to give it a unique and personal touch.
Another delicious recipe, which is difficult to resist, is the Smoothie bowl with Ambrosia™ apple and cinnamon. Even if the smoothie bowl can be perfectly consumed in summer, I wanted to choose seasonal ingredients such as cinnamon, pomegranate and Ambrosia™ apple, of course. Rich in polyphenols, flavonoids and fibers Ambrosia™ is the absolute protagonist of this delicious autumn recipe. I added creamy plain yogurt to make it perfect for breakfast or an afternoon snack. As you eat this healthy and light snack with a spoon, I created a harmonic, attractive and appetizing composition. My smoothie bowl is served with apple slices, pomegranate seeds, oat flakes and chia seeds. I used honey for sweetening, a good alternative to sugar, to increase the recipe’s sweetness and taste and to enhance the aromatic notes of the apple.
