Put a little bit of olive oil and chopped onions into a large casserole. Add the rice and toast for a few minutes while constantly stirring.
Heat vegetable broth or water in a pot.
Pour a few ladles of hot vegetable broth into the casserole with the toasted rice and add apple cut into small cubes. Add more vegetable broth little by little, if necessary.
Salt, pepper and stir in Gorgonzola cheese. Serve the risotto with walnuts and chopped parsley.
